Super Kale Salad


Hubby is an inspired chef (when he's not flying airplanes) and concocted this fabulous salad to go with our new healthy eating program.  I've posted and emailed it so many times, that I wanted to create a short blog post to help me pin it to our Isa-friendly recipe board.  It is made best with a team, and I have lots of helpers busy shredding the Kale and cutting up cherry tomatoes. :) The above picture shows Orange Glory tomatoes for fall color. :)


There is no such thing as "too many cooks in the kitchen!"  It's also a great way to get little ones involved - such as breaking up the walnuts, etc.  I use the shredding blade on my food processor to shred the carrots - but the rest can be done by little hands.  Try to keep the bigger stems out of the salad - be sure to show your little ones how to put just the leafy parts in the bowl.  Recipe below - enjoy!

Superfood Kale Salad

2/3 a large bag of Kale (or a big bowl full of fresh)
pint of blueberries
diced red onions
4 carrots shredded in food processor (5-6 if small)
small package of cherry tomatoes
Craisins
Walnut pieces

Dressing:
Mix together in a 2 cup measuring cup:
1/2 cup olive oil
1/4 cup lemon juice
1/4 cup apple cider vinegar
few sprinkles of red wine vinegar
1 tsp of sugar


Mix together all of the above - leave out on counter for an hour -hour and a half.  Store uneaten part in fridge for 2 days.

Baptism on the Lake


Sarah came to know Jesus this year and we've been so busy with life that her Baptism kept getting put off.  So with the slower pace of life here in Maine, we asked our North Wayne Church Pastor John to baptize Sarah at the lake.  Our entire Church came to the house after Church for her Baptism and lunch afterwards.  There were folks we hadn't seen for a while like Mary's hubby, Sonny.


Mary is still recovering from a stroke a few weeks ago, so we were so happy they could attend.  The kids love Miss Janet and Marvin as well.  She's been ill this year, and she had a difficult time getting down to the lake - but faithful Marvin worked it all out.



John conducted a beautiful lakeside service and reminded us of the beautiful gift of forgiveness of sins.



And out into the water they went.







Nana cried through the whole service. It was beautiful.


And then, on cue from our Jewish forefathers, we celebrated by eating together. :)




The choir ladies, are such a treasure to our Church.  Pat was chatting elsewhere.


Bobby and Jean encouraged us as usual.  They have a strong faith and Perry loves talking to Bobby each summer.  He also brings us fresh eggs each week from his free range chickens - what a blessing!


Sarah opened lovely gifts and cards from our Northern Church family.


And last but not least - Alice and Nana were the cleanup crew!  Thank you ladies!



It was a beautiful day for Sarah and all of us.  Thank you, Jesus!

Small Town 5K!


We all headed down to the elementary school to do the "Wayne 5K" this morning.  Nana and I were the road crew, encouragers, and picture takers. :)  The fire chief came out to stop traffic - right after this guy rode by...


They all filed out to the road



And off they went!  Having fun as they went by.



Then they started to spread out... Sarah came first and later ran the entire way with the lady in the green shirt.  She chatted enough to find out they had the same February birthday!


Next came Jenny with Dad hot on her heels....


Next was Rachel - all by herself and enjoying the quiet


And Diva Katie who was running her very 1st 5K!


The order switched a bit - as Perry caught up with Sarah - but she ran it in for a fast finish.  Sarah was the surprise winner and then proceeded to run back and forth with each girl as they ran in.  She has amazing energy!  Each girl had a personal best and all had fun!



Then we stopped by the library bake sale for some well earned treats - Loon cookies!  Love small town Saturdays. 


And yes, for those of you doing the crunch challenge - we got those in, too!
